I’m very happy to bring you this eggless Strawberry Cupcake recipe. As most of the people in India are stict vegetarians, even they can enjoy these cupcakes. If I don’t mention that these are Eggless, nobody can guess that these are made without Eggs. The texture of these cupcakes is just amazing.
Follow all the instructions carefully and make them to enjoy with your family!
125 gm ( 1/2 cup) plain flour
1/2 tsp baking powder
1/4 tsp baking soda
28 gm oil
105 gm (3/4 cup packed powdered sugar or fine sugar)
28 gm (1/2 cup) butter
30 ml water
95 ml (1 cup) milk
1/2 tsp vanilla essence & 2 tbsp strawberry crush
1/8 gm salt
Preheat the oven to 350F, line the muffin tray with muffin papers.
In a bowl, sift the flour,baking powder,baking soda and salt.
Meanwhile in a small bowl whisk together the sugar, yogurt,milk,salt,oil and vanilla essence & strawberry crush
Pour the wet ingredients to the dry ingredients, whisk lightly. Dont overmix the batter.
Spoon the batter evenly to the already prepared pan and bake for 15-20minutes until a skewer inserted comes out clean.
Transfer to wire rack and cool it.
Carefully remove the muffins from the pan, cool
then decorate with icing completely and enjoy with family .
